These traditional Swiss almond-flour cookies boast a rich chocolate flavour, a light nuttiness, and a fun, chewy texture. 

Donald’s Swiss cookies feature a harmonious blend of rich chocolate and warming spice. Made with finely ground almond flour, they have a light nuttiness and irresistibly crisp yet chewy texture. Deeply chocolatey thanks to Cocoa Rouge Unsweetened Cocoa Powder, and with their elegant appearance, they make a perfect treat to enjoy with a warm drink as you kick off the new year. 

Ingredients


Ground almonds 375 g
Granulated sugar 550 g
Guittard Cocoa Rouge 72 g
AP flour 28 g
Cinnamon 5 g
Cloves 2.5 g
Egg whites 145 g 

Directions


Blend all except egg whites.
Add egg whites-mix until just mixed 
Roll to approximately 7mm. Sprinkle liberally with granulated sugar.
Mark with grooved rolling pin.
Cut into a 40mm.
Bake at 320f for approximately 10 minutes (do not overbake).
